How to make home made spudmuffins
What you need:
Yukon Gold Potatoes
MMFlavorCo No Bull Spice https://mmflavor.com/products/chipotle-bbq-seasoning-1
Deep fryer
Oil with no tras fat
Large pot or bowl
Colander
How to:
Fill large pot or bowl 2/3 full of cold water
Slice potatoes between 3/16 an 1/4 inch thick with skin on
Put sliced potatoes into pot with water. Stir a bit with your hand to make sure that the potato slices have water all the way around them and are not sticking together.. Makes sure to leave a couple inches of water above the level of potatoes. They will swell when soaking and any that rise above the water level need to be thrown out. Put cover on pan and place in fridge for between 12 and 24 hrs.
Preheat deep fryer to 325
Remove potatoes from pan into colander. Rinse with cold water. Spread out to dry.
Place Spudmuffins into deep fryer as many as can be done safely. Cook 4 minutes 30 seconds making sure they do not stick together. Remove from fryer and spread out on a pan.
Let cool to room tempurature.
Place back in deep fryer for 3 minutes 25 seconds
(For extra crispy spuds let cool to room temp again and recook for 3:25)
